Arthritis-Friendly Recipes from Sandra Lee

Try these Sandra Lee recipes for quick, easy-to-prepare meals. The celebrity chef created a set of arthritis recipes for the program “I Can with RA in the Kitchen,” sponsored by Bristol-Myers Squibb and the Arthritis Foundation. Each takes only 10 minutes to prepare – a boon when painful joints limit your time in the kitchen.

Lemon Rosemary Chicken

Time: Prep 10 minutes, bake 20 minutes

Four 6 oz. boneless, skinless chicken breast halves
2 teaspoons extra-virgin olive oil
1 teaspoon salt-free lemon-pepper seasoning
1 teaspoon salt-free citrus-herb seasoning, Spice Islands® Salt (optional)
3 organic lemons, thinly sliced
Fresh rosemary sprigs
1 ¼ cup organic chicken broth
½ tsp. crushed garlic

Preheat oven to 375 degrees F. Brush both sides of chicken pieces with olive oil and sprinkle with lemon-pepper seasoning, citrus-herb seasoning and salt (optional); set aside.

In a baking dish, arrange 2 to 3 slices of lemon and a sprig of rosemary for each chicken piece. Place chicken, smooth sides up, on lemon and rosemary. Top each chicken piece with another sprig of rosemary and 2 to 3 slices of lemon.

Bake in preheated oven for 20 to 25 minutes or until chicken is no longer pink (165 degrees F). Remove chicken to platter and cover with aluminum foil to keep warm.

In a small saucepan, combine half of the rosemary from the baking dish and any browned bits from baking dish. Add chicken broth and garlic. Bring to a boil over medium-high heat; cook until mixture is reduced by half. Using a fine-mesh strainer, strain mixture. Discard solids. Serve mixture with chicken. Garnish with additional lemon slices and rosemary sprigs. Servings: 4

Mediterranean Vegetables

Time: 10 minutes

1 package (16 oz.) loose-pack frozen mixed vegetables (broccoli, cauliflower, carrots)
1 can (14.5 oz.) diced tomatoes with basil, garlic, and oregano
1 tablespoon capers, drained

In a microwave-safe bowl, combine frozen mixed vegetables, tomatoes and drained capers. Cover with plastic wrap; microwave on high setting for 6 to 8 minutes, stirring halfway through cooking time.

NOTE: To give this arthritis recipe a new flavor, use a different package of mixed vegetables. Great mixtures include baby peas, baby carrots, snow peas and baby corn or Brussels sprouts, cauliflower and carrots. If you can't find a mixture with your favorite vegetables, try mixing and matching to create a colorful combination of your own. Servings: 4

I, too, have a bad knee, shoulder, and both wrist. I also love horses, rode and trained all my adult life and I would love to talk to someone with these problems.

Sprinkle with salt and pepper. In a large heavy skillet, heat olive oil and butter over medium heat. Add chicken breasts. Cook for about 5 minutes, until browned, then turn. Add mushrooms and cook for about 5 minutes longer. Add green onions and apple brandy and cook for another minute, until chicken is cooked through and mushrooms are tender. my name is amanda and im 24 yrs old; ive had joint pain since middle school. i was a track and cross country runner; then one day i fell and landed on my right knee- i was not able to run or play sports since. it was hard going from running 10 miles a day to limping 1/4 a mile in gym. i have had 3 knee operations to try and help the problems. i am slowly getting worst. i have oa, lyme arthritis, hypermoblity, and spinal defects. very little has helped. im allergic to nsaids so that is out. what i do is try to get rest i found sleeping on my stomach is best for my knees, i try not to stand to long or sit too long no lefting over 25 (i try but am norm lifting 50-75 till i hurt my shoulder). i take a multi vit, b12, c, iron, 2 joint (fleximin)every day so far that has been the best combo for me. i know that my horse riding is bad for my joints but i refuse to give it up; ive given up all other sports and will not give up the horses- i did stop jumping and training though. i havent noticed a diff. with what i eat but will be trying some of the ideas i found on the web site. i would be nice to have some one to talk to about my problems. its hard -when i got hurt my drs told my parents i was just being a girl, now being forced to run ive done more damage, it makes my parents feel bad to tell them how i feel( they think its their fault) and my friends dont under stand beacuse of my age. my email is libitangel86@yahoo.com if anyone wants to talk. i am open to any sugges.

I have OA in most all joints and I have found the low carb (moderate)way of eating works great to reduce the fluid caused by inflammation. I love the convenience of frozen veggies, eat only broiled meat (small amounts), fruits, dairy and nuts and lots of water. I take one Aleve a day,2 Cosamin DS twice a day and sleep in a recliner which has really helped the pain in my knees, back and ankles.Rest is essential throughout the day, not sleep but sitting with feet up and being quiet for 15-20 minutes 3 times a day, more than that and stiffness sets in. Good time to read. Its important to keep joints warm.I try to always be thankful this is not fatal. Hope this helps

I have oesto-arthritis in my knees and joints,i am having difficulties walking,sleeping,i am trying to lose weight but at moment nothing is helping me.I am going in bus at work,try to waking to places,i work in the community and i have stop using car,still i am alway in pain.I have changed medication, still but nothing seems to work If anyone give me advise or any tips.I look forward to hear from you.

Im developing an inflammation around my waist at the back around my pelvis..earlier i also had wrist pain but it faded away ..but my shoulders used to pain a lot..theres a difference of one n half inch btween my legs vch i think has caused the whole thing n i really had no idea about arthritis..and now my family is in australia...and i am so depressed..told them earlier but then now i told them am fine..im very depressed..im 50 kgs..and i just wanna know how long will i live.ya im 20.

There are books at the book store and Library addressing all these issues discussed here. You HAVE TO STOP EATING ANYTHING THAT IS WHITE, SUGAR BLEACHED BREAD, RICE, POTATOE CALIFLOWER, IF IT IS WHITE DO NOT EAT IT WILL CAUSE PAIN IN ALL YOUR JOINTS, CALL IT FIBROMYALIA, ARTHRITIS, OR IT IS ALL THE SAME YOU MUST CUT OUT WHITE FOODS FROM YOUR DIET YOUR BODY HATES IT INCLUDING MILK. TRY THIS AND KEEP A LOG OF THE FOODS YOU EAT EVERYDAY AND IF YOU DO NOT EAT ANY WHITE FOODS YOU WILL NOT HAVE PAIN WITHIN 2 WEEKS AND YOU WILL RECOVER THESE WHITE FOODS RAISE HAVOC ON YOUR BODY. HOPE THIS HELPS! TAKE CARE!! PS. OPRAH SHOW ALSO DID A SHOW ABOUT THIS TOO!! NO WHITE FOODS!

Thanks for these great recipes. I have ankylosing spondilitis and have sufferend from lots of pain and fatigue, unbelievable fatigue, and the feeling of having the flu all the time. Months ago I cut out refined grains and sugar (almost 100%) and now am anti-inflammatory med and anti-ulcer med free!!! I feel great when I stick to this diet. Everyone should give it a try and I hope that Sarah Lee keeps giving us more great recipes that help us.

I developed arthiritis for almost six years, Could anyone advise me what to eat,as i am desparate now, unfortunately i have also chorestrol which is eating me almost 5 years, now the combination of food is really crazing me. Please help.

I was diagnosed with psoriatic arthritis in September 09. I have no visible skin lesions, but I do suffer from joint pain, especially in my left ankle, and lower back. Since taking methotrexate, I've improved somewhat, but ankle pain still makes it difficult to walk sometimes, and lately I've experienced more pain at night. Has anyone tried acupucnture, or Bikram yoga? I've been thinking of both ideas, but I have to think about time and cost. Any suggestions?

Id have arthritis through out my body,I guess for abuising my body,alot from injury and fast repitory movement. I was slowly losing weight,decided to Quit smoking,gainded back alittle.Felt good being in a size 14 on my way to a size 12,got hurt at work needed to be put back on a anti depressent and a difforent arthritis drug.Right now I am Getting worse and more achy every dayand gained back all and more.Now i take celebrex 200MG and cymbalta 60MG,but i also work in a laundry handling hot articles 10 hrs a day, sometimes gets up to 110f. I believe the exteme heat is causing more inflamation,dont tell me to ice it cause its hard to ice your intire body.GOing to go back to the doctor to talk about all this.Oh! Did I mention in the last year Ive developed ulcers.Im eating better cut out almost all oil,more fruits and vegtables.But when I get off work Im starved and severly crsve sugar.I certainly scared to gain more weight.Certainly need help.I realy feel lost.Im steaming more foods and when Im not working Im realy tired and of course notice my pain more.Im very low income and even with insurence its hard, my medicine is 150 t0 200 a month,without the ulcer meds that havent helped. So i need a diet good for my arthritis and ulcers.Also to curve the severe sugar cravings.My job is very phisical so I like to cook for the week when I can.

I find that some foods like tomatoes and citrus I have no problem with. All people are different and have different reactions to food.What is good for one is not good for another. You have to find out what works best for you. I have osteoarthritis, disc disease and RA in all joints.

As you can see there are many different foods and activities that aggravate RA for different people. I have no problem with nightshades (tomatoes, peppers, potatoes etc) but I do have a large problem with gluten. Many people react differently to different foods so no diet is completely "arthritis friendly."

After three months of what is called an "elimination diet" I was able to find out what my body did not like in what I was eating. As it turned out--for me--that was all forms of gluten which meant no wheat, barley, or rye or little things like "malt flavoring."

My new diet is occasionally frustrating in that I have to cook more of my own food, but the gain that I have in lessened pain is wonderful. I also find that I eat healthier (and cheaper in the long run) because I am cooking most of my own foods.

Elimination diets are frustrating to go through with while you are on them, but if you find that something is a trigger for inflammation for you it is well worth the inconvenience!

These sound very good. Is their a way you can out a calorie count on these recipes. Also having RA losing wieght is a great thing to do! Walking great! I would rather have recipes that are healthy and are good for you with joint relief not so much limited movement relief! With the drugs out there now, You cna usually get alot of relief but at flare up times need a boost!

I don't have RA, but do have arthritis and well as my husband. I'll try these receipes and see if we improve and perhaps find relief to our pain. thanks a lot for these

Nightshade vegetables like eggplant are known to aggravate arthritis. I find that when ever I eat food high in sodium, like corn beef, I feel a lot worse. Also, dairy is known to aggravate arthritis.

According to Edgar Cayce...arthritis is about eliminations...the body doesn't properly eliminate the food...causing inflammation to occur.

This recipe missed the point...they envision a person with crippled hands and legs having difficulty cooking. The recipe isn't particularly bad...but how about crafting recipes that intentionally reduce inflammation...not just recipes that provide physical convenience.

I have had R.A for nine years.. I found the best thing for it is to go mostly Vegan.. and take Glyconutrients...mostly the Ambrotose Complex powder, as much as you can afford..Sport capsules...6-8 a day, Plus 2 twice a day, this is a patented product from the States, which you can get on-line at www.mannapages.com/8essentialsugars .. be patient like take it for a mininum of 6-9 months.. it really, really helps..now I am lower body pain free... without this I would have been a cripple, as my feet joints were so inflammed and my hip. At least now it is controlled.. I don't need surgery.. but must say have been taking for 8 over years..
The best thing for R.A and oesto-arthrities.. I have recommend many oesto Arthrities frinds and it works.. but do have to be patient...as cells take up to 6 nonths to rejuvenate.
Be an associate and go on automatic order to get at wholesale price...What is money without health... worth a try. I take alot of the Ambrotose powders sometimes 3 containers a month, 3-4 containers of Sport and 2 containers of Plus a month.. it really has given me relief..from my R.A now I can dance pain-free.

I have had RA for the past 28 years. Since I had knee replacement surgery last fall, my RA has gotten worse. Is this related to the stress of the surgery or due to something else? Also, do certain foods make RA worst?
