ROSEMARY-ROASTED CASHEWS: Stir a half pound of cashews, 2 teaspoons dried rosemary, and 2 teaspoons olive oil in a bowl until the nuts are coated. Spread the nuts on a baking sheet, sprinkle with salt and pepper, and roast for 10 minutes at 350 degrees. Serve warm.

MARINATED GOAT CHEESE: Slice a 4-ounce log of goat cheese into 1/2-inch rounds and arrange in a wide shallow bowl. In a small bowl, mix 1/4 cup olive oil, 2 sprigs thyme (or 2 teaspoons dried thyme), 2 teaspoons chopped garlic, and 1 teaspoon fennel seeds. Pour the oil over the goat cheese, sprinkle with salt and pepper, and serve at room temperature with whole wheat crackers.

INDIAN VEGETABLE DIP: Season a small container of plain yogurt with cumin, garlic powder, chopped cucumber, and a bit of salt. Use as a dip for cucumber rounds, bell peppers, or baby carrots.

Joyce Echols,
I know you haven't done the right research in the right areas because you would have come to different conclusions. If you are doing research on the Standard American Diet you will come to different conclusions than if you do one on a plant based diet.
The only exercise you talked about was walking/aerobic.
You have a closed mind if you can't at least listen and think about what I said without becoming defensive.
I apologize for name calling there was no need for that. I was wrong.
If you eat a plant based diet especially one with plenty of fresh vegetables(salads) and a cooked meal and a salad at dinner/supper/ the evening meal what everyou call it the weight will come off very easily even without exercize (although exercize is a good idea) I have done it and so have thousands of other people. You are simply feeding your body what it needs and wants and genes aren't involved in what you put into your mouth only in getting those nutrients to the right places in your body. Everybody has cancer in their bodies (so says the American Society) it just depends on what you eat or not eat as to whether it manifests itself in a disease.
You have a closed mind when you won't even look into that way of eating and you defend your ways. If you eat the standard american diet full of fat and junk there is nothing there for nutrition. Yes, some people like your father may do that but just think how much better he would be if he didn't.
You have made yourself into a victim. "I can't because my genes won't let me" is victim talk. Change the way you eat/think and you will change your life.
When you eat a plant based diet the plants protect you from diseases that animal products cause especially dairy products.
You incite people to anger, Joyce, just look at how you talked to Gordon and his reaction and mine also for that matter. If all you can say is My father, brother, sister, etc. do this and they can't lose weight, get well, or what ever they can or can't do there is no research behind that kind of talk you become a clanging bell and why would anyone want to take you seriously? You have become a victim.
I am very sorry for you Joyce Echols, you don't seem to be able to stand up and defend your way of thinking with anything substanstial.

To Jan I would like to say how do you know that I have not done the right research. Also, how do you know that aerobics is all I do. It is interesting to see that you say I have a closed mind and am trying to force stupid stuff on you. All I was saying is that genetics do also play a role in whether people lose weight and how easily. I also know that diet and exercise are important. It takes a total lifestyle change but our genes also count.

Joyce Echols,
Scientist schimentist. I'm not impressed. Even my doctor who has had goodness knows how many years of education doesn't know how food effects the body and what to eat because he was not taught in doctor school ;)about nutrition he just pushs pills. What do you know about nutrition? Have you read anything by Nancy Appleton, T. Collin Campbell, Dr. John McDougall, George Malkmus? How much research have you done on how food affects the body? If beer will make you drunk why won't other foods also affect us some how?
Okay, you are a scientist but that doesn't mean you have done the right kind of research. Socratees said, "Let food be your medicine and your medicine be your food."
And good for you you do all kinds of aerobics and you still haven't lost weight. You still need to do weight training if you want to lose fat because muscle burns fat.
I repeat it's a lifestyle. If you put too much of the wrong stuff in your mouth even once in a while you will not lose weight. Change the way you eat, stop doing the wrong things to your body and your body will heal itself and you will lose weight.
Ten years ago I went on a plant based diet. NO animal products at all and no I am NOT defecient in ANY nutrient. Acid refulx went away, fungus under toenail went away ARTHRITIS went away plus I lost 65lbs. My health problems just vanishedwent. I know people who had cancer that went on a plant pased diet and that too just vanished.
So change the way you eat and yes I know it is difficult and you will probably refuse because you are emotionally attached to your way of eating but your taste will change and you will love a plant based diet after a while but you need to change. You probably won't, much to your detriment but please, please, please stop telling people that it is in the genes because IT IS NOT. There is too much research out there that says so. It is alife style. You eat the way your family taught you to eat. You probably eat what you ate when you were growing up. It didn't help you then. It hurts you now. Change the way you eat you'll lose weight and feel a whole lot better and there is plenty of research out there to prove it. Start reading different peoples research, Ms Scientist. Go to www.drmcdougall.com he has tons and tons of research to prove it and go to www.hacres.com also.

Why is it that people with closed minds try to force stupid stuff onto the rest of us?

By the way guys I do exercise. I park farther from the door to get in extra walking and I go to exercise class. I also eat vegetables, fish etc. As a scientist I know that genes also have something to do with it. My brother had to eat like crazy to gain enough weight to join the army-the minimum weight was 125. He did not diet then and does not now.

Futher more Joyce Eckles men typically have more muscle weight on them than women and that burns fat. Maybe you and your sister should try weight lifting and no you won't look like a muscle bound Mr. America because women don't get muscle bound like men so unless they that is their goal and use some kind of drug enhancement to do make them look like that. Aerobics won't do it for. You need muscles and aerobics don't build muscle.
The same goes for you Yvonne.
You really are whinny. Waa Waa Waa. Cheese anyone? Quit your complaining and do something different. You do know what the diffinition of insanity is don't you? Doing the samthing over and over the same way and expecting different results.

You tell them Gordon.
Genes and metabolizm have nothing to do with it,Yvonne It's a lifestyle of eating properly and exercise. Joyce, Gordon is skinny because he practices what he preaches.
Would you ladies like some cheese (which is the king of junk food) with that whine?
Joyce Eckles

Hey Gordon you may be slender for other reasons. My father was skinny all of his life and ate anything he wanted. He loved deserts. My brother and nephew inherited his gene for this. My sister and I on the other hand did not. Diet and exercise are necessary but are not the be all end all.

if you dont want to gain weight get off you ass and exercise and stop eating like you do geeze....it's not a science thing...watch what and how much you eat and exercise..It's not hard,,,I'm almost 50yrs of age and am thin.I eat what ever I want when I want.I eat alot of fruit and veggies but trust me I do eat some junk foods also...it's all in how you prepare and the amount you eat..exercise is also a key..

Reply to Barb: I too have diverticulitis. Here are a couple of tips: Peel, then slice a cucumber lengthwise, and use a spoon to scoop out all the seeds. Then chop your cucumber slices from what remains.
Regarding feeling full without gaining weight, celery or carrot sticks with ranch dressing or celery with salsa or cream cheese is a great snack. The celery will help to fill you up without the calories since it is high in fiber.

I always get rave reviews by making home-made Boursin Cheese and filling a decorator and making dainty designs on sliced veggies. The recipe is from Weight Watchers and I just thin it down a bit with fat-free milk so it will press very easily through the decorator tip. This is delicious, healthy and the presentation is an eye-catcher!
